Easy, peasy potato skins
It’s about that time. Football season is about to begin. Sundays filled with cheering, yelling, and eating!!
Anyone love potato skins? I’m not a huge fan but the hubs definitely is. I saw this recipe on Pinterest (which I pinned, then searched for to give proper credit…it’s no where to be found. I’ll keep looking!!)
I tweaked this a little because I wanted to change a few things.
Start with 6 potatoes (scrubbed & halved) like so…..
Preheat the oven to 400 degrees. Melt 1/4 a cup of butter and spread around the bottom of a large pan (9×13 is what was suggested). Grate parmesan cheese onto the melted butter like so….
Sprinkle other seasonings you’d like. We used garlic salt, parsley and a few other misc. spices we had. Place the potato halves face down in the butter mixture. Bake for 40-45 minutes.
The kitchen smelled SO good. In fact I could even smell these way upstairs. So yummy!!!
Ours did stick to our pan a little so next time I might use some cooking spray to prevent that but the mixture looked really delicious. I didn’t try them because I’m watching my calories plus they aren’t really my favorite. Hubs said they were so good. He can’t wait to make them again. I think we’ll add bacon to them next time.
