If you are just joining us, we are on day 2 of our 12 Days of Christmas extravaganza.  You can find out the topics here, in case you’d like to link up.  Otherwise you can read on and find out what my favorite Christmas Cookie is!

day 2

Well, these are my new favorites.  About a month ago, a girl brought some chocolate covered peanut butter to a meeting I attended.  As I was thinking about what to make these came to mind, with a few tweaks I threw in.
We attend a mommy and me class each week. It was our turn to bring snack and the theme happened to be reindeer.  So, around 2am I remembered those chocolate covered peanut butter balls and decided to try something new.
I don’t have an exact recipe but here’s a brief synopsis of how I created these Exceptional Reindeer Cookies.  How do you like the name?  Maybe Sarah at The Fontenot Four and I should sell our creations online (you’ll understand that when you read her post).
Here’s what I started with.

First, I spread peanut butter on the crackers.

Next, I placed some small pretzel sticks in the peanut butter and
covered with a second peanut butter cracker.

Then I coated a piece of wax paper with melted chocolate chips
and placed the crackers right on top.

I coated them in chocolate (top and sides), then added colored
chocolate chips to create eyes and a nose.  They don’t look so
just yet but… SAMSUNG DIGITAL CAMERA

Here’s what they look like after they are removed from the wax paper.

I must say they are absolutely delicious.  A  sweet and salty perfection.  Can you hear that?!?  That’s me tooting my own horn.  I made these the night before our class around 10pm.  They were a huge hit.  These pictures are the second batch in less than 3 days.  I think I’ll make more for Christmas too!

YUM! Your posts aren’t showing up in my reader, so I’m glad I came to check on you. I like this series idea, especially with permission to post something NOT brand new lol! Somehow I’m just not getting any new writing done. oh well– one more week of school, then 2 weeks of vacation!
