So, I decided to do the mom thing and make a yummy treat for a class full of three and four year old cutie pies.

What is it about Valentine’s Day?  Every year it attempts to turn me into Susie mom-of-the-year wannabe.

I love to bake.  I love when November arrives so I can start getting ready for Christmas.  It is definitely my favorite time of the year.

Then, Christmas is over and it’s tough to get back in the groove of life.   I seem to go through this period of laziness after the hubbub of the holidays.  Then, by the time Valentine’s Day is here I’m in a funk and ready to start baking again.

So here we go.  I pulled out a few things that I had in my baking cabinet and decided to make cupcakes in ice cream cones.  A little less messy and easier to eat with tiny toddler hands!

I’ll spare you the play by play details on how to make a cake since there are directions on the box. 

I will give you a hint on how to keep this process from getting crazy.  Wrapping some foil around the base of the cone helps them fit snugly in a regular cupcake pan.

Fill the cones half full with batter.  I actually fill mine a little more than half which makes them fluff up a tiny bit above the rim of the cone. 

The photo below is why I put a little more than half inside.  Otherwise, it looks like this and comes out a little too flat.

Then, of course, decorate!!

I made 24 cupcake cones but still had some cake mix left over.   I had enough to make 8 cupcakes as well. 

I’d prefer to make my own batter and icing but since it’s been crazy around here there just wasn’t time.   So, thanks to Keebler, Duncan Hines, and Pillsbury this time around!
